So as you may or may not know we have a beautiful Bushman wood fired stove in Percy, our shepherds hut. But we also have some incredible Gozney gas ovens in Annie, our airstream trailer.

So, let's talk about the age-old debate: wood-fired vs. gas-fired pizzas. Have you ever wondered why some pizzas just hit differently? It might come down to how they're cooked.

The long and short of it is that both pack a pizza punch! In either of our trailers we are able to create authentic, delicous, fresh sour dough pizzas.


But let's take a look a bit more at the difference...

Wood-Fired Pizza


Wood-fired pizza - the OG. Just the sound of it brings to mind visions of crackling flames and that authentic, rustic flavor.

The pizza oven, fueled by wood, brings about a unique cooking environment that results in pizzas with a smoky, charred crust. It's all about that perfect balance of chewy inside and crispy outside. And let's not forget the aroma - that hint of woodiness that elevates the entire experience. Not to mention how incredible the oven looks with it's rolling flames and the smoke coming out of Percy's chimney!

Gas-Fired Pizza


On the other side of the ring, we have gas-fired pizza. Modern, efficient, and consistent - gas-fired ovens have their own charm. We have two set up in Annie and they really do work well!

They offer precise control over the cooking temperature, ensuring a uniform bake every time. The result? A pizza that's reliable, with a consistent texture throughout. Think of it as the dependable friend who never lets you down. There also is far less set up time as there is no waiting for the fire to get roaring! (Of course there will always be an element of heating the stone but gas is a little quicker!)



How to Choose - The Million-Dollar Question


So, how do you know which type of pizza is best for you? It ultimately comes down to personal preference and what you value most in a pizza.


If you're all about that traditional, smoky flavor, then a wood-fired pizza might be your best bet. The charred edges and slightly uneven cooking add that touch of rustic authenticity that many pizza aficionados swear by. It's more than just a meal; it's an experience. Percy our shepherd's hut has a high output, it is a large oven and we can get up to 3 pizzas cooking at one time within the oven.


On the flip side, if consistency and reliability are what you seek, a gas-fired pizza could be the way to go. The even cooking ensures that each bite is just like the last, perfect for those who like things just so. But then honestly, we feel the same about wood fired!
